Coca de tomates
These are the ingredients you need
4 whole pitas - 4 chopped vine tomatoes - 1 julienned red bell pepper - 2 shallots, cut in rings - 100 g crumbled aged cheese - small rosemary sprigs - 2 tbsp olive oil
Preparation
Toast the pita bread in a toaster (or the oven) so that they puff up a bit. Then slice them in half to make two pockets. Preheat the oven to 200°C. Stuff the pockets with tomatoes, bell peppers and shallots and sprinkle with a pinch of salt and freshly ground pepper. Sprinkle the cheese and a few rosemary leaves on top and then drizzle with some oil. Heat them in the oven for 12-15 min. and serve immediately!
