SAVOURY BREAKFAST CRUFFIN WITH TOMATO

These are the ingredients you need

2 vine tomatoes - 6 slices of bacon - 100 g grated cheese - 1 tin of croissant dough (from the refrigerated section) - 2 sprigs of parsley - cooking spray

Preparation

Preheat the oven to 180°C. Bring a pan of water to the boil and prepare a bowl with ice water (ice cubes + water). Cut a shallow cross on the bottom of the tomatoes. Put them in the boiling water for 15 seconds. Remove the tomatoes from the boiling water and immediately transfer to the ice water bath. When the tomatoes have cooled, peel off the skins. 

Quarter the tomatoes and remove the seeds. Chop the remaining flesh into small cubes. 'Plop' open the croissant dough tin and roll out the dough. Divide the dough into three equal pieces. Press any holes closed with your fingers. Put two slices of bacon across the width of the dough, followed by some diced tomatoes and grated cheese. Roll up. Cut the roll down the middle lengthwise and roll up again. Spray some baking spray in your muffin tin and gently press the cruffins into the holes. Sprinkle a little more cheese on the cruffins. Bake in the oven for 15 to 18 minutes, until the dough is golden brown. Serve topped with more tomato cubes and some fresh chopped parsley. A delicious savoury breakfast!
