Spicy fresh tomato salad
These are the ingredients you need
250 g cocktail vine tomatoes - 15 g Italian seasoning - 4 tbsp extra virgin olive oil - 2 tbsp of balsamic vinegar - 3 spring onions - 100 g rucola (rocket)
Preparation
In a salad bowl, whisk the Italian seasoning with the olive oil and vinegar into a creamy dressing. Cut the cocktail tomatoes in four and mix these with the spicy salad dressing. Shred the spring onions and mix these and the rucola with the spicy tomatoes just before serving.
Variations
Substitute the spring onions for fresh basil leaves. - Add approx. 100 g of croutons for an authentic Tuscan 'bread salad' (panzanella) - Add 2-3 tbsp of (lightly roasted) pine nuts. - Replace the rucola with tender lettuce or lamb's lettuce.
