Middle Eastern tomato soup with carrot, nectarine and ginger
These are the ingredients you need
2 tbsp olive oil - 1 diced onion - 1 cm finely chopped fresh ginger - 1 grated carrot - 300 g chopped vine tomatoes - 2 chopped nectarines - 1 l chicken stock - 1 bunch finely chopped coriander - 100 g crumbled feta
Preparation
Heat the oil in a stock pot and sauté the onions and ginger until golden brown. Add the grated carrot, tomatoes and nectarines and cook for 2-3 minutes. Add the stock and bring to the boil. Half cover the pot and let the mixture simmer for 30 min. Purée the soup using a blender and season with freshly ground pepper and coriander. Sprinkle the feta over the soup just before serving.
