Tapas kids spring roll
These are the ingredients you need
4 cocktail tomatoes, sliced - 4 rice paper sheets - 125 g ricotta - 1 cucumber - fresh flat-leaf parsley or coriander - salt and pepper - baking paper
Preparation
Cut the cucumber in half lengthwise and remove the seeds with a spoon. Cut the cucumber into long thin square strips as you would for sushi. Take one rice sheet at a time and soak it in lukewarm water for around 15 - 20 seconds. Next, put it on a piece of baking paper. Spread a generous tablespoon of ricotta on the rice sheet and season with salt and pepper. Top the ricotta with a thinly sliced tomato, a strip of cucumber and a sprig of parsley or coriander. Fold one side up along the length of the filling, then fold the left and right sides inwards and tightly roll up the spring roll. Repeat this process for the other three spring rolls. Cut the spring rolls into four pieces and serve.
