Tarte tatin with tomatoes and goat’s cheese
These are the ingredients you need
20 snack tomatoes, 5 tomatoes per tarte tatin - 1 packet of puff pastry squares (butter) - 80 gr goat’s cheese - 2 tbsp honey - 1 egg yolk - thyme, bunch - cookie cutter - brush - 4x tartlet or tarte tatin moulds 10-12 cm
Preparation
Preheat the oven to 200°C. Cut the tomatoes in half and slice the goat's cheese. Divide the honey between the 4 moulds and top with the tomatoes, a few thyme leaves and a slice of goat's cheese. Use a cookie cutter or knife to cut the slices of puff pastry the same size as the tartlet or tarte tatin mould. Put the puff pastry on top of the tomatoes and press the edges down well. Brush the puff pastry with the egg yolk and poke holes in the dough with a fork. Bake the tartes tatin for about 15-20 minutes at 200°C. Rest the tartes tatin for 5 minutes.
