Fresh tomato pizza
These are the ingredients you need
500 g vine tomatoes - 50 g Italian herb mix - 1 large onion - 2 tbsp olive oil - 2 round ‘Turkish’ loaves - 200 g grated pizza cheese
Preparation
Finely chop the onion and cut the tomatoes into small chunks. Heat the olive oil in a casserole and fry the onions for approx. 3 min until light golden brown. Add the chopped tomatoes and herbs and bring the sauce to the boil whilst stirring all the time. Cover the pan and leave the sauce to simmer for approx. 10 min. In the meantime, preheat the oven to 220°C (hot air oven). Cut the Turkish loaves horizontally in two and put them on two baking trays with the open side upwards. Distribute the fresh tomato sauce over the four halved loaves and spread evenly. Sprinkle the ‘pizzas’ with the cheese and slide the trays into the oven. Bake the pizzas for 8 to 10 min until golden brown. Serve immediately.
Variations
Put a few slices of salami on the layer of tomato sauce. - Add 100 g sliced mushrooms to the tomato sauce. - Sprinkle some fresh rucola over the pizzas before serving.
