Stuffed tomatoes
These are the ingredients you need
4 plum tomatoes - 4 tbsp. soft spreadable goat's cheese - 4 tbsp. pine nuts - 2 tbsp. honey - 2 tbsp. pesto
Preparation
Remove the crowns from the tomatoes and cut them in half lengthwise. Use a small melon baller to scoop out the insides of the tomatoes. Combine the honey, pesto and goat's cheese. Stuff the tomatoes with this mixture and scatter the pine nuts on top. Roast the stuffed tomatoes in the oven set at 175 degrees Celsius for 10-12 minutes.
