Summery tomato, strawberry and red currant gazpacho
These are the ingredients you need
200 g vine tomatoes - 100 g strawberries - 100 g frozen red currants - 1 lime - sprig fresh mint
Preparation
Put the tomatoes in boiling water for 1 minute, remove and peel them (no need to score them first). Cut the tomatoes in half and purée these, the hulled strawberries and frozen red currants using a blender. Juice the lime. Season the soup with a pinch of salt and the lime juice, garnish with the mint and serve. The frozen red currants provide a creamy structure. Serve the soup ice cold!
